My mom made this for breakfast one Christmas morning, and I literally couldn't stop eating it. No idea what it was, and I didn't care, I just focused on my watering mouth. A couple years later, when Matt and I got married, I adopted the recipe as a newlywed and transformed it into me and Matt's traditional Christmas morning breakfast.
Since then, the recipe's spread through Matt's family like wildfire. We make it for our friends, and I even had it set as an appetizer at Carter's first birthday party.
It works as a breakfast dish or as a delicious dip for guests.
Yes, the ingredients sound odd together. The final product doesn't look like anything that deserves a spot on the page of a glossy magazine. Just trust me, and try it. It's so simple, you really have no excuses.
Ingredients
8 oz. block cream cheese
Can of Rotel tomatoes & green chiles, drained
1 lb. ground breakfast sausage
Brown sausage in a skillet, drain excess grease. Return sausage to skillet.
Add cream cheese and cook over medium heat until melted.
Add Rotel (make sure you've drained it) and mix well.
Serve warm with flaky french bread, croissants or even tortilla chips.
